You can keep insulin low by calorie restriction too. Just have a small yogurt/half a piece of fruit. I eat anything and everything, but very small portions. It works.

One more note-I read a book called "The Five Bite" diet a whiie back and it is probably the best diet book I have ever read. It sounds crazy, but if you eat a set amount of bites at each meal, it resets your hunger stat. Does not matter what you eat. He has overweight people do two meals of anything, five bites each meal, like a gastro bypass patient. If you don't have a weight problem, but want to keep insulin low and hunger low, pick maybe ten bites three times a day and you won't be able to eat more after a week. It is the only thing that works I have ever tried, unless you want to eat a lot more, then I agree, low carb is the only way (with maybe weekly refeeds.)

The problem is not carbs, the problem is processed food. You won't get diabetic from eating a whole plant based diet. Unprocessed carbs are vegetables, fruits, legumes, grains, etc. in their pure form. They're great and will never get you insulin spikes because fiber slows down the absorption process.
